Summer Salsa

A deliciously satisfying Summer Salsa, made with tomatoes, mango, corn and black beans. Perfect with tortilla chips or as a complement to everything else.

Ingredients to Make Summer Salsa:

  • roma tomatoes
  • mango
  • red onion
  • jalapeño pepper
  • lime
  • fresh cilantro
  • olive oil
  • garlic
  • corn
  • black beans

How to Make Summer Salsa:

  1. In a medium mixing bowl, combine the roma tomatoes, mango, red onion, jalapeno, garlic, lime juice and olive oil.
  2. Add half the mixture to a food processor and blitz until it begins to liquify. Then add it back into the mixing bowl and toss to combine.
  3. Mix in the corn and black beans. Chill in the refrigerator until ready to serve.

Ingredients

  • 4 roma tomatoes, diced
  • 1 mango, peeled and diced
  • 1/4 cup red onion, diced
  • 1 fresh jalapeño pepper, seeded and finely chopped
  • 1 lime, juiced
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp oil
  • 2 cloves garlic, minced
  • 1 cup corn
  • 1/2 cup black beans, drained

Instructions

  • In a medium mixing bowl, combine the roma tomatoes, mango, red onion, jalapeno, garlic, lime juice and olive oil.
  • Add half the mixture to a food processor and blitz until it begins to liquify. Then add it back into the mixing bowl and toss to combine.
  • Mix in the corn and black beans. Chill in the refrigerator until ready to serve.

Notes

You can use canned or frozen corn, just be sure to thaw beforehand.
