Ingredients to Make Stuffed Sweet Potatoes:

  • sweet potatoes
  • button mushrooms
  • cheddar cheese
  • bacon
  • chicken broth
  • heavy cream
  • chives
  • thyme
  • salt and pepper
  • scallions

How to Make Stuffed Sweet Potatoes:

  1. Preheat the oven 400ºF/200ºC.
  2. Coat the sweet potatoes with olive oil and salt and bake on a baking sheet, uncovered for 45-60 minutes. Until it pierces easily with a knife.
  3. While the potatoes cook, sauté the bacon and mushrooms in a pan until crisp.
  4. Add the cream and cheese and cook until the cheese is melted and the sauce thickens. Season with salt and pepper if needed to own taste.
  5. Once the sweet potatoes are ready, cut them in half lengthwise and scoop some of the flesh out.
  6. Spoon some of the sauce into each of the boats, garnish with chopped scallions and serve immediately.

  • 4 sweet potatoes
  • 1 cup button mushrooms, sliced
  • 1 cup cheddar cheese, shredded
  • 1 cup bacon, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 2 tsp dried chives
  • 2 tsp dried thyme
  • salt and pepper to taste
  • scallions to garnish

Instructions
