Sun-Dried Tomato Vinaigrette is a quick and healthy homemade salad dressing that pairs well with a variety of different salads!

This tasty salad dressing is a great homemade alternative to store bought dressings when you’re trying to eat clean. It’s simple to make and you can even make a double batch then store it in the refrigerator for up to ten days!

Ingredients to Make Sun-Dried Tomato Vinaigrette:

  • olive oil
  • red wine vinegar
  • dijon mustard
  • sun-dried tomatoes
  • dried parsley
  • garlic
  • shallot
  • salt & pepper

How to Make Sun-Dried Tomato Vinaigrette:

  1. Add the oil, vinegar, dijon mustard, sun-dried tomatoes, parsley, garlic, shallots, salt and pepper into a mason jar and shake.
  2. Serve over your favorite salad or store in the fridge for up to ten days!

Ingredients

  • 3/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp dijon mustard
  • 2 tbsp sun-dried tomatoes, minced
  • 1 tsp dried parsley
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 garlic clove, minced
  • 1 tbsp shallot, minced

Instructions

  • Add the oil, vinegar, dijon mustard, sun-dried tomatoes, parsley, garlic, shallots, salt and pepper into food processor or blender. Pulse until smooth.
  • Serve over your favorite salad or store in the fridge for up to ten days!

This recipe is perfect with out homemade Roasted Cherry Tomatoes
