Mini Pizza Quiches

This is a quick and easy recipe for Mini Pizza Quiches. Great breakfast for a crowd or for on-the-go. It can even be prepped in advance. 6 Ingredients. 35 Minutes. Low-Carb. Keto. Gluten-Free.

Ingredients to Make Mini Pizza Quiches:

  • eggs
  • heavy cream
  • shredded mozzarella
  • pizza sauce
  • pepperoni 
  • dried oregano
  • salt
  • pepper

How to Make Mini Pizza Quiches:

  1. Preheat the oven 325 degrees. Spray a muffin pan with cooking spray and set aside.
  2. In a medium bowl, whisk the eggs together with the cream, salt, pepper and oregano.
  3. In a prepared muffin pan divide the pepperoni equally into each cup. Then do the same with the cheese.
  4. Pour the eggs mix over the cheese and pepperoni. Sprinkle with additional cheese or oregano if desired.
  5. Bake in the oven for about 20-25 minutes. Remove from the oven and serve, use the pizza sauce to dip.

Ingredients

  • 6 eggs
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella
  • 1 cup pepperoni, quatered
  • 1 tsp dried oregano
  • 1 tsp salt
  • to taste pepper
  • 1 cup pizza sauce

Instructions

  • Preheat the oven 325 degrees. Spray a muffin pan with cooking spray and set aside.
  • In a medium bowl, whisk the eggs together with the cream, salt, pepper and oregano.
  • In a prepared muffin pan divide the pepperoni equally into each cup. Then do the same with the cheese.
  • Pour the eggs mix over the cheese and pepperoni. Sprinkle with additional cheese or oregano if desired.
  • Bake in the oven for about 20-25 minutes. Remove from the oven and serve, use the pizza sauce to dip.

Notes

1. To prepare the muffin pan, you can either lightly oil the sides and bottom of each cup. Or you can use muffin liners. 
2. Using muffin liners for these Mini Crustless Quiches is preferable if you’re planning to use this recipe for an “on-the-go” breakfast.
