Smoked Sausage Hash

This Smoked Sausage Hash is great with some fried eggs and a big glass of orange juice. It’s the perfect start to a lazy weekend morning.

So, this is obviously not the most unprocessed meal you’ll ever have. We spent quite a while at our local market reading the ingredient lists of smoked sausages and ended up choosing the brand “Holmes Smokehouse”. It has the least amount of ingredients – which is exactly what you want.

Ingredients to Make Smoked Sausage Hash:

  • smoked sausage
  • olive oil
  • russet potatoes
  • onion
  • red pepper
  • green pepper
  • garlic
  • cumin
  • cayenne pepper
  • salt & pepper

How to Make Smoked Sausage Hash:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium high heat. Add sliced sausage and cook until it starts to crisp then flip, about 4-5 minutes. Remove from pan and set aside.
  2. Add the rest of the olive oil then the potatoes. Cook until the potatoes start to soften, about 5 minutes.
  3. Add in the onion, red pepper, green pepper, garlic and seasonings. Cook until onion is translucent, about 2-3 minutes.
  4. Once the vegetables are softened and the potatoes start to crisp, add the sausage back in. Cook until rewarmed then serve hot.

Ingredients

  • 8 ounces smoked sausage, sliced
  • 2 tablespoons olive oil
  • 3 medium russet potatoes, diced
  • 1/2 cup onion, diced
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 1 clove garlic minced
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • salt & pepper to taste

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium high heat. Add sliced sausage and cook until it starts to crisp then flip, about 4-5 minutes. Remove from pan and set aside.

Notes

I use this vegetable chopper to diced all the veggies into perfectly even squares in no time. 
Feel free to add your own favorite vegetables or leave out any that you’re not particularly fond of.

  1. Hi Carolyn, underneath the method you’ll find a note that explains what the “spicy mayo” is all about. “Our spicy mustard mayo is a bit of a cheat! 4 parts mayo, 1 part mustard and a blob of hot sauce.”! Hope that answers your question! 🙂
