Curried Green Beans

Curried Green Beans – a quick and simple low carb, gluten free side dish. Curry flavored green beans topped with feta cheese.

Not only is it super flavor-packed, but it’s also pretty quick to make and goes great with basically everything.

Ingredients to Make Curried Green Beans:

  • fresh green beans
  • onion
  • vegetable broth
  • curry powder
  • feta cheese
  • salt and pepper
  • olive oil

How to Make Curried Green Beans:

  1. Sauté the onion in the olive oil, on a medium/low heat until soft. About 5 minutes.
  2. Add the beans and sauté for a couple of minutes.
  3. Add the broth, curry powder, salt and pepper and simmer until the beans reach your desired level of tenderness. We cooked it for about 10 minutes.
  4. Add the 1/4 of feta and stir until the feta is melted, which also causes the sauce to thicken.
  5. Transfer to serving dish and top with a sprinkle of feta for garnish.

  • 1 small onion, diced
  • 1 cup vegetable broth
  • 2 tsp curry powder
  • 1/4 cup feta
  • salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
