Chunky Green Bean Mashed Potatoes. MMMMMMM!
I’m not exactly sure when I ate this recipe for the first time, but it’s always been a low-key favorite of mine. It’s usually tucked away and forgotten in a dusty corner of my mind, only to be brought out occasionally (if something magically triggers my memory in exactly the right way). Then, after eating it, I’m always just a tiny bit mad that I allow myself to forget about it. Like, how is it even possible?? In a way, I guess I should see it as a good thing, since white potatoes are a special treat in my opinion and I don’t want to be sad that I can’t eat this recipe every day.
I’ve noticed that there seems to be a lot of different opinions and confusion about the whole “low-carb” movement. I have to admit, I get pretty peeved when I read that people are cutting completely healthy vegetables out of their diet, because they have a “high carb content”. Not all carbs are created equal, just like all calories aren’t created equal.
At Living Chirpy, we believe that the only bad carbs are the ones that have been so processed that they’ve been stripped of their nutrients. Thus, they are empty carbs and of course, empty calories. So potatoes, though high in carbs, are a natural, whole food that contains a plethora of good stuff in addition to the “carbs”. So, in my opinion, they can definitely form part of a balanced diet.
Thus, these Green Bean Mashed Potatoes are perfectly fine when they’re occasionally thrown into the mix…AND they’re the epitome of simple. Just the way we like it. Toss potatoes, green beans and onions into a pot and boil for approximately 25 minutes. Roughly mash the potatoes and mix in the spices, butter and cream. What you’re left with is definitely…NOT baby food (but I completely understand how many people can make that mistake). It’s a delicious spin on regular mashed potatoes and a way to sneak another vegetable onto the dinner plate. Although, you can’t really call it “sneaking”, because the green beans are blatantly obvious. So, I take that back 🤔.

- 2 • large red skin potatoes [cut into large chunks]
- 2 cups • green beans [topped-and-tailed cut into smaller pieces]
- 1 • onion [roughly chopped]
- 4 tbsp • butter
- 4 tbsp • half and half or cream
- 1/2 tsp • garlic powder
- 1/2 tsp • paprika
- 1/2 tsp • black pepper
- 1/4 tsp • dried thyme
- 1/4 tsp • dried parsley
- 1/4 tsp • ground coriander
- to taste • salt
Toss the potatoes, green beans and onion into a pot. Cover with cold water and then bring to a boil.
Boil the veggies for approximately 20-25 minutes, until you can easily stick a fork through the potatoes. Drain any excess water well.
Add the cream, butter and spices.
Roughly mix everything together until it is mashed, but still chunky.
Optional: Garnish with fresh scallions.
