As a general rule, I only drink water. When I want to treat myself, I’ll drink tea. I used to order sweet tea at restaurants, but the habit came to a screeching halt back in April when I ordered a cup of sweet tea from a popular fast food chain. I only drank about half of the cup and then forgot about it. The next morning Cody called me over and told me that he was planning to dump the tea so he could throw away the cup, but instead of a liquid tea, there was a thick gelatinous something in there. It really put me off conventional sweet tea and I haven’t had a single sip since.

This experience really drove the idea home that home-made and fresh is always better. What should have been a innocent cup of sweet tea (not that sugary sweet tea is very innocent lol), turned out to obviously have something in there that could turn it into a thick jelly. When you make your own iced or sweet tea at home today, you can be pretty sure that it will still be tea when you take a sip of it tomorrow.

So, in comes our Peach Iced Rooibos Tea. Since rooibos is gaining popularity all over the world, not just in its native South Africa – I thought I might use it with this recipe. It has a naturally sweet smell and taste compared to general black tea and thus doesn’t need a lot of sweetness to make it taste good, especially when it’s infused with the sweetness of fresh peaches. I actually prefer it without any added sweetness, because it just already tastes delicious.

A few bags of rooibos tea, 2 juicy ripe peaches and a little bit of patience is all you need for this refreshing drink!

Peach Iced Rooibos Tea

Ingredients

  • 1 gallon/3 litres • water [1/2 of it should be boiling]
  • 4 • rooibos teabags
  • 2 • peaches [cut into slices]
  • optional/to taste • honey

Instructions

  • Add the teabags and peach slices to a large jug.
  • Pour in 1/2 gallon/1.5l boiling water over and stir.
  • Leave overnight in the fridge.
  • Remove teabags and peaches and top up with the rest of the water.
  • I prefer not to, but if you want the tea slightly sweet - add some honey to taste.
