This is a delicious and easy recipe for Apple Coleslaw that pairs well with tacos and even served on its own as a side dish.

Ingredients to Make Apple Coleslaw:

  • apple
  • cabbage
  • carrot
  • cilantro
  • oil
  • red wine vinegar
  • lime juice
  • garlic clove

How to Make Apple Coleslaw:

  1. Cut the apple into thin strips and mix with the cabbage, carrot and cilantro.
  2. In a jar, shake together the oil, red wine vinegar, lime juice, garlic, salt and pepper.
  3. Pour the dressing over the salad and toss.
  4. Refrigerate until ready to use.

Ingredients

  • 1 granny smith apple, shredded
  • 2 cups cabbage, shredded
  • 1 carrot, shredded
  • ½ cup fresh cilantro, roughly chopped
  • 3 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lime juice
  • 1 garlic clove, minced

Instructions

  • Shred the apple and mix with the cabbage, carrot and cilantro.
  • In a jar, shake together the oil, red wine vinegar, lime juice, garlic, salt and pepper.
  • Pour the dressing over the salad and toss.
  • Refrigerate until ready to use.

Notes

  • You can also add a dollop of diet compliant mayonnaise/plain yogurt if you’d like to make it creamier.
