It’s pretty much impossible, in my opinion, to ever TRULY kick sugar cravings. Once you’ve had a taste, the best you can do from there is to manage it. Pretty scary when you look at it that way – eeeek 😬. Your sugar addiction is very easy to spot once you start doing your utmost to eat a healthy whole food diet. You know, when suddenly the sugar demon is around every corner trying to tempt you into eating that bad white stuff.

The best defence is finding a good middle ground, ie. finding some healthier alternatives to enjoy (in moderation), like these No Bake Almond “Cookies”. I created these so I could feel slightly better about eating something sweet. And to be honest, it doesn’t even feel like such a compromise, because they actually taste pretty darn delicious!

These little almond “cookies” are ground almonds mixed with some melted butter, honey and then finally drizzled with a little dark chocolate. They barely take 10 minutes of hands-on time to make and about 30 minutes in the freezer. Then about 5 minutes to gobble them all up if you’re not careful! So, be careful!

At the moment, Cody, baby Bo, and I are preparing for a trip to South Africa. My family over there hasn’t met Bo yet so even though it’s pretty stressful trying to figure it all out, it’s pretty exciting! He’s growing like a weed, so hopefully everything falls into place soon! Might need to whip up a huge batch of these to keep me motivated so I can get the planning done quicker!

No Bake Almond Cookies

Prep Time: 10 minutes

Cook Time: 30 minutes

Yield: 16 - 20 cookies

No Bake Almond Cookies

Ingredients

  1. 1 cup • raw almonds
  2. 1 tbsp • raw honey
  3. 3 tbsp • melted butter
  4. to taste • melted dark chocolate

Instructions

  1. Grind the almonds until fine in a blender or food processor. Should look like a moist flour.
  2. Mix the almonds with the honey and butter.
  3. Form into small flat round cookie shapes.
  4. Melt some dark chocolate in the microwave for a minute or two.
  5. Drizzle over the cookies.
  6. Put in the freezer for 30 mins.
  7. Enjoy!
