It’s always kind of difficult to know what to snack on when you’re trying to be low-carb, amirite? I seem to run into that problem daily, even though I’m trying to cut down on snacking in general. Almonds have always been one of my favorite things to munch on, but even your favorites can start tasting like cardboard if you eat it too often. Thus, I have decided to start flavoring my almonds in a bid to make them “new” again. My favorite so far is the one in front of your eyes today – Spicy Tomato Toasted Almonds.

The coolest thing about sprinkling some flavor onto almonds is that it literally takes no time at all. The thing that takes the longest is waiting for your oven to preheat. Not too bad, right? Don’t you think the world needs instant “pre-heated” ovens?? Who’s with me on this one? ☝🏼

So, these Spicy Tomato Toasted Almonds are basically just coated in a bit of tomato paste, chilli powder, salt and pepper, and then slid into the oven for 5-10 minutes. Once they’ve cooled, they’re a tasty little snack you’d be hard-pressed not to gobble up quicker than it took you to make them (which would be a mean feat, seeing as it takes barely 10 minutes to make them to begin with).

I used to be happy to make myself some Baked Veggie Chips with Sundried Tomato Hummus as a snack, but I didn’t always have the time to do so. Now I’ve got a more “on demand” snack when I need it. So, do yourself a favor and try some flavored almonds as your new go-to low-carb snack. You’ll be happy you did!

Spicy Tomato Toasted Almonds

Prep Time: 5 minutes

Cook Time: 10 minutes

Yield: 2 servings

Spicy Tomato Toasted Almonds

Ingredients

  1. 1 cup • raw almonds
  2. 1 tbsp • tomato paste
  3. 1 tsp • salt
  4. 1 tsp • pepper
  5. 1 tsp • chilli powder

Instructions

  1. Preheat oven to 350F/180C
  2. Mix all the ingredients together until all the almonds are coated.
  3. Spread evenly on a sheet of foil on a baking tray.
  4. Bake for 5-10 minutes (until the coating looks dry).
  5. Cool before eating and store in an airtight container.
