I’ve never been to Thailand, but I sure love me some Thai food! Visiting Thailand is pretty high up on my bucket list, though, and we’ll hopefully scratch it off in the near future. But for now, we have to satisfy our Thailand dreams by visiting every Thai restaurant in our area as often as we possibly can. One of our very favorite, and obviously very well-known, Thai dishes is Thai Red Curry. We knew it would be the first one to be Chirpy-fied whenever we got to that point.
Well, we’ve arrived at that point and can finally present to you -> Simple Thai Chicken Red Curry with Zoodles. Yay!
This easy lil’ recipe uses only 8 simple ingredients and comes together super quick. Yay! Just the way I like it! Please note that we are not experts in Thai cuisine and we’re definitely not claiming to be super authentic with any country-specific recipes we recreate. We usually just like a flavor and then decide to make our own version of it that (hopefully) gets as close as possible to the flavor we originally fell in love with.
So, according to us, whether this recipe is authentic or not, it does a pretty darn good job of satisfying our Red Curry craving, while still being healthy!
For those of you that follow our posts regularly, you might have noticed that this is the first recipe we’ve posted in quite a while. You might also know that the reason for that is because Cody and I eloped at the end of April and had a week-long getaway. Once we get the pictures from our photographer, I’ll include one or two of them in a future post.
The week after our elopement we met up with my mom and sister Zellie in Orlando, FL for a week at Disney World! I’m in love with Disney World, and even though this was my 4th visit, I’m already excited about the next visit lol!
