Simple Veggie Quinoa

Quinoa is all the rage right now, so we decided to check it out! It started out as trying to create a yummy side dish, but it turned out so well, we could’ve had it as a main meal. Our Simple Veggie Quinoa is quick and unbelievably yummy!

I used to be “scared” of quinoa (or rather, just unwilling to try it), thinking it was a “pretentious” ingredient and possibly carby and unhealthy. This week though, I did some research and it turns out, quinoa is technically not a grain, but a seed. It is also considered a “complete” protein as it contains all the essential amino acids. Very cool! Not as bad as I initially thought.

I won’t recommend adding quinoa to your daily menu, because it does have a high carb content. It’s way healthier than any other grain (rice, etc) and is the best choice if you crave something “grainy” like this occasionally.

What I love most about our little quinoa recipe is the fact that it’s a one pot thing. Toss all the ingredients in and leave it until all the water is soaked up. Quick and easy recipes are my favorite.

After 5 minutes of dicing and about 15 minutes of cooking, you’re left with a fluffy bowl of quinoa. If making this recipe is your first time making quinoa, I need to warn you: You’re going to fall in love with it. Sorry in advance.

Ingredients

  • 1 cup • quinoa rinsed
  • 2 cups • vegetable broth
  • 1 • celery stalk diced small
  • 1 • carrot diced small
  • 1 • small onion diced small
  • 1 tsp • dried thyme
  • to taste • salt/pepper

Instructions

  • Toss everything into a pot and bring to the boil.
  • Turn down heat and simmer for about 15 minutes, until all the liquid is soaked up and you see the little white string around each little quinoa seed.
  • Serve up this beautiful little dish with a sprinkle of scallions!
