Sausage Breakfast Hash

This Smoked Sausage Breakfast Hash is great with some fried eggs and a big glass of orange juice. It’s the perfect start to a lazy weekend morning.

Main Ingredients:

– smoked sausage – russet potatoes – onion – red pepper – green pepper

1. In a large skillet, heat 1 tablespoon of olive oil over medium high heat. Add sliced sausage and cook until it starts to crisp then flip, about 4-5 minutes. Remove from pan and set aside. 2. Add the rest of the olive oil then the potatoes. Cook until the potatoes start to soften, about 5 minutes.

3. Add in the onion, red pepper, green pepper, garlic and seasonings. Cook until onion is translucent, about 2-3 minutes. 4. Once the vegetables are softened and the potatoes start to crisp, add the sausage back in. Cook until rewarmed then serve hot.
