This is a simple and easy recipe for No Churn Coconut Ice Cream. It's so easy to make and contains no added refined sugar!

Ingredients
2cupsheavy whipping cream
1cancream of coconut
1teaspoonvanilla extract
1teaspoonsalt
Instructions
In a medium mixing bowl, beat the heavy whipping cream until stiff peaks form.
Carefully fold in the cream of coconut, vanilla extract and salt until well incorporated, do not over mix and deflate the whipping cream.
Pour mixture into a 9x5 loaf pan and freeze for at least 6 hours.
Serve with shredded or toasted coconut.
Notes
If your can of cream of coconut is solid, run it under some warm water in the sink and mix it until it softens. Be sure to use cream of coconut instead of coconut cream as coconut cream is not sweet and your ice cream will not be sweet. If you only have coconut cream you can add honey or maple syrup for a sweetener.
