Ingredients
1lbground beef
4cupsvegetable broth
2cansdiced tomatoes
1onion(diced)
2celery stalks(diced)
1/2cupblack olives(sliced)
1/4pickles(I chop 2-3 pickle spears)
1/4cuptomato paste
1tbspminced garlic
1/2tbspsalt(we use course salt)
1/2tspblack pepper
2tspdried oregano
to tasteshredded mozzarella cheese
garnishfresh parsley
Instructions
Set your Instant Pot to Sauté.
Add the ground beef and cook until browned.
Add everything else to the pot (except the cheese and parsley).
Seal the Instant Pot and set to Manual: High Pressure for 15 Minutes.
Quick release pressure when done, and serve immediately.
Garnish with shredded mozzarella and fresh parsley. (Optional)
Notes
1. Omit the cheese to make this a Paleo Approved recipe.
