roma tomatoes,
diced

mango,
peeled and diced
1/4
cup
red onion,
diced
1
fresh jalapeño pepper,
seeded and finely chopped
1
lime,
juiced
1/2
cup
fresh cilantro,
chopped

tbsp
oil
2
cloves garlic,
minced
1
cup
corn
1/2
cup
black beans,
drained
Instructions
In a medium mixing bowl, combine the roma tomatoes, mango, red onion, jalapeno, garlic, lime juice and olive oil.
Add half the mixture to a food processor and blitz until it begins to liquify. Then add it back into the mixing bowl and toss to combine.
Mix in the corn and black beans. Chill in the refrigerator until ready to serve.
Notes
You can use canned or frozen corn, just be sure to thaw beforehand.
