Sweet Potato Tots

  • 2 sweet potatoes (cut into small cubes - about 3-4 cups)
  • 8 strips of Sugardale Hickory Smoked Bacon
  • 1/2 cup fresh scallions (chopped)
  • 1 cup cheese (we used medium cheddar, grated)
  • 1 tsp paprika
  • to taste salt and pepper
  • for frying oil


  • In a medium sized pot, add the sweet potato cubes and cover with cold water. Bring to a boil and allow to simmer until the potato is fork tender. Approximately 10-15 minutes.
  • While waiting for the sweet potato to boil, start by frying th bacon in a pan until crispy. Set a side to cool down. Once cool, chop into bits.
  • When the potatoes are fork tender, drain the remaining water and then roughly mash the with a fork. Should fill about 2-3 cups when mashed.
  • Add the chopped bacon, fresh scallions, cheese, and paprika.
  • Season with salt and pepper to taste. Be sure to TASTE the mix to ensure you’ve added enough salt.
  • Once you’re happy with the flavor, roll the mixture into 1”/3cm long tater tot shapes.
  • Shallow fry the tots in a pan for about one minute per side, or as soon as they start to darken in color - there's no beautiful golden color for sweet potatoes unfortunately!
  • Use a slotted spoon or tongs to remove the tots from the oil and set on a paper towel to absorb some of the oil.
  • Serve immediately with ketchup!


Tips and Tricks:
1. If you’re having trouble working with the mixture, you can keep it in the refrigerator for 30 minutes to stiffen it up a little bit.
2. Add enough oil to your pan to cover the tots halfway.
