Sweet Potato Tots
Sweet Potato Tots elevated in flavor with bacon, cheese and scallion. Super easy to make: Needs just 5 ingredients and 45 minutes to make! Gluten-Free. Keto. Low-Carb.

Servings: 4 servings
- 2 sweet potatoes (cut into small cubes - about 3-4 cups)
- 8 strips of Sugardale Hickory Smoked Bacon
- 1/2 cup fresh scallions (chopped)
- 1 cup cheese (we used medium cheddar, grated)
- 1 tsp paprika
- to taste salt and pepper
- for frying oil
In a medium sized pot, add the sweet potato cubes and cover with cold water. Bring to a boil and allow to simmer until the potato is fork tender. Approximately 10-15 minutes.
While waiting for the sweet potato to boil, start by frying th bacon in a pan until crispy. Set a side to cool down. Once cool, chop into bits.
When the potatoes are fork tender, drain the remaining water and then roughly mash the with a fork. Should fill about 2-3 cups when mashed.
Add the chopped bacon, fresh scallions, cheese, and paprika.
Season with salt and pepper to taste. Be sure to TASTE the mix to ensure you’ve added enough salt.
Once you’re happy with the flavor, roll the mixture into 1”/3cm long tater tot shapes.
Shallow fry the tots in a pan for about one minute per side, or as soon as they start to darken in color - there's no beautiful golden color for sweet potatoes unfortunately!
Use a slotted spoon or tongs to remove the tots from the oil and set on a paper towel to absorb some of the oil.
Serve immediately with ketchup!
Tips and Tricks:
1. If you’re having trouble working with the mixture, you can keep it in the refrigerator for 30 minutes to stiffen it up a little bit.
2. Add enough oil to your pan to cover the tots halfway.
