Cauliflower Soup - a light, but filling cauliflower soup with peas and crispy bacon goodness that comes together in just 25 minutes.

Ingredients

large head of cauliflower, chopped

cups
vegetable broth
6
bacon strips, cooked and chopped
2
cloves garlic, minced
1
cup
frozen peas
1/2
tsp
dried thyme
1/2
cup
heavy cream
salt and pepper to taste
Instructions
Boil the cauliflower florets in the vegetable broth, garlic and thyme for approximately 10-15 minutes. Until they are tender.
Use and immersion blender to blend the cauliflower and broth together until smooth.
Add the chopped bacon, peas and cream to the soup.
Season to taste with salt and pepper.
Notes
Add the peas earlier and blend with the cauliflower if you'd prefer a more strongly pea flavored soup.
