Tangy Cucumber Salad

Ingredients

  • 1 cucumber [sliced as thin as possible with a mandolin]
  • 1/2 red onion [thinly sliced]
  • 2 tbsp sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp vinegar
  • 1 tsp dried oregano
  • 1 tsp honey
  • salt and pepper to taste

Instructions

  • Squeeze the water out of the cucumber using your hands or a tea towel.
  • Mix the sour cream, mayonnaise, lemon juice, vinegar, oregano and honey together - adding salt and pepper to taste.
  • Pour the dressing over the cucumber and toss.
  • Refrigerate until ready to eat!
