Tomato Basil Bisque with Parmesan Crisps

Ingredients

  • 1 • onion [diced]
  • 2 • celery stalks [diced]
  • 4 • tomatoes [diced]
  • 2 cloves • garlic [minced]
  • 1 tbsp • tomato paste
  • 1 tsp • basil
  • 6 cups • vegetable broth
  • to taste • salt/pepper
  • 1/3 cup • heavy cream

Instructions

  • Cook the onion and celery until soft [about 5 minutes]
  • Add the rest of the ingredients [except cream] and simmer for 45 minutes.
  • Pour the soup into a blender and blend until smooth.
  • Add soup back to the pot and stir in the cream.
  • Once it gets back to the boil, it is ready to be served! Mmmm
