Ingredients
1pound pork tenderloin, thinly sliced
2 tablespoonolive oil
1onion, diced
2cupsbroccoli florets
1red bell pepper, thinly sliced
1cupsugar snap peas
1cupcarrot, peeled and sliced
1cupwhite mushrooms, sliced
2garlic cloves,minced
¼cupchicken broth
¼cupsoy sauce
1tablespoonhoney
1 tablespooncornstarch
Instructions
In a small mixing bowl, combine the chicken broth, soy sauce, honey and cornstarch then set aside.
In a large skillet over medium heat, add 1 tablespoon of olive oil and pork and cook until the pork is seared on both sides. Remove from pan and set aside.
Add the rest of the olive oil then add the onion, broccoli, red pepper, peas, mushrooms, carrot and garlic. Cook until tender but still crisp, about 8-10 minutes.
Pour the chicken broth mixture into the skillet and mix well. Cook for 2-3 minutes until the sauce begins to thicken. Add the pork back in and coat well. Garnish with green onions and sesame seeds.
