Easy Blender Romesco Sauce

A quick and easy romesco sauce that needs just 7 fresh ingredients, and 25 minutes to make. Gluten-Free. Low-Carb. Keto. Paleo. Whole 30.

Ingredients

cup
raw almonds
1
yellow onion
(roughly chopped)
1
red bell pepper
(roughly chopped)
1
can
diced tomatoes
4
cloves
garlic

tbsp
olive oil
2
tbsp
red wine vinegar
1
tbsp
paprika
1
tsp
salt
1/2
tsp
black pepper
Instructions
Add all the ingredients to a blender and blitz until as smooth as it will go (it will always stay a bit on the chunky side).
Pour contents into a sauce pan over a medium heat.
Simmer for about 20 minutes.
Notes
Tips and Tricks:
1. We prefer to leave our sauce on the chunkier side, but the longer you blend it, the smoother it will be.
