Easy Blender Romesco Sauce

Ingredients

  • 1/2 cup raw almonds
  • 1 yellow onion (roughly chopped)
  • 1 red bell pepper (roughly chopped)
  • 1 can diced tomatoes
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Add all the ingredients to a blender and blitz until as smooth as it will go (it will always stay a bit on the chunky side).
  • Pour contents into a sauce pan over a medium heat.
  • Simmer for about 20 minutes.

Notes

Tips and Tricks:

1. We prefer to leave our sauce on the chunkier side, but the longer you blend it, the smoother it will be.
