Ingredients

chicken breast, sliced
1
onion, sliced
1
red bell pepper, sliced
1
medium zucchini, sliced into half moons
1
cup
sliced mushrooms
1
can
coconut cream
1
tablespoon
mirrin
1
tablespoon
hoisin
1
tablespoon
sriracha
2
tablespoon
teriyaki sauce
2
tablespoon
soy sauce
1
teaspoon
lime juice
1
teaspoon
ground coriander
1
teaspoon
paprika
2
teaspoons
chili powder
2
teaspoons
salt
1/2
teaspoon
cayenne pepper
Instructions
Sauté the onion, mushrooms, red bell pepper, zucchini and chicken together until cooked. Approximately 8-10 minutes.
Add the coconut cream, sauce, and spice mix and stir well.
Simmer for approximately 10 more minutes.
Serve with basmati rice, zucchini noodles, quinoa or whatever else you'd like. Garnish with fresh cilantro.
