These French Onion Potatoes are a staple side dish to any dinner but without the usual use of packet soup for flavor.

Ingredients
1poundrusset potatoes
1tablespoonbutter
2onions, sliced
1clovegarlic, minced
1teaspoondried thyme
1cupred wine
2cupsheavy cream
1cupmozzarella cheese
salt and pepper to taste
Instructions
Preheat the oven to 375 degrees. Wash then thinly sliced the potatoes. Set aside.
In a large skillet, cook the onions in the butter until they are caramelized, about five minutes.
Add the garlic, thyme, and red wine to the onions and cook until the wine has completely reduced. Next up, splash the cream in there and let it heat up. Add salt & pepper to taste.
In an 8x11 baking dish and start layering the potatoes, onions and mozzarella. When you have all the potatoes in the dish, scoop the remaining onions and cream sauce on top.
Finish it off with a sprinkle of cheese on top and slide it into the oven for 45 minutes at 375º covered with tin foil and then remove the foil and broil for about 5 minutes - until it's golden and bubbly.
