2lbpork (We used Pork Loin Rib Side Chops that were about an inch thick)
2tablespoonoil
2teaspoonground coriander
1teaspoonground cumin
½dried thyme
2cupsfrozen peas
2cupsmushrooms(sliced)
1onion(diced)
1cupmarsala cooking wine
1cupheavy cream
to tastesalt and pepper
Instructions
Mix the coriander, cumin, thyme, salt and pepper and use as dry rub for the pork.
Get a pan hot and cook the the pork for approximately 4 minutes on each side.
As the pork cooks, take another pan and cook the onions and mushrooms for a couple of minutes, until the onion is translucent. Season with salt and pepper.
Now, splash the marsala wine in the pan with the and let it reduce halfway.
Then, add the cream to the onions and mushrooms, and let it heat up. As soon as it bubbles, throw the peas in there and allow to simmer until the pork is cooked.
When the pork is done, scrape the sauce over the pork (in the pan) and then serve.
Notes
Tips and Tricks:
1. Pork is done when it reaches an internal temperature of 145F/62C.
