- 4 chicken breasts (butterflied)
- 1 cup salsa (¼ cup per breast)
- ½ cup cheese (shredded) or about 100g/4oz sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- to taste salt and pepper
- to taste oil (for cooking)
- garnish fresh chopped coriander (optional)
Preheat the oven to 200ºC/400ºF
Butterfly the chicken (cut them all the way through so you have 8 thinner pieces).
Season the chicken with the coriander, cumin, salt and pepper.
Arrange the chicken in a casserole dish and top each piece with approximately ¼ cup of salsa.
Top each a slice of cheese (or a sprinkle of shredded cheese).
Bake for 20-25 minutes.
Garnish with fresh coriander and serve immediately.
