Ingredients
2chicken breast (cut into bite-sized pieces)
1cauliflower head (cut into florets)
1/4cupgrated cheese
1tbspbutter (cold from the fridge)
2tbspsour cream
1tspgarlic powder
1/2cupchicken stock
1/2cupsweet corn kernels (canned or frozen - cooked to instructions)
1/2tspdried thyme
1/2tspdried oregano
1/2tspdried basil
1/2tspmustard powder
1/2tspgarlic powder
1tsppaprika
salt and pepper, to taste
Instructions
For The Cauliflower Mash:
Boil the cauliflower florets until tender, approximately 10 minutes.
Once cooked, carefully spoon the cauliflower into a food processor.
Add the sour cream, 1 tsp of garlic powder, salt and pepper to taste.
Blitz until smooth. If necessary, add a little bit of the cooking liquid to get it started. Stir in the corn.
For The Chicken:
Mix the herbs and spices and pour over the chicken. Toss to ensure all the pieces are evenly coated.
Heat up a skillet and add a bit of oil. Cook the chicken until no longer pink and translucent.
For The “Gravy”:
Add the chicken stock to the skillet used for cooking the chicken.
Once boiling, turn down the heat and add the butter. Stirring until melted. Add more if you would like the ”gravy” to be thicker.
Notes
You can also use a bit of almond flour or tapioca starch to thicken the gravy if your personal dietary requirements allow it.
