1poundground beef
2large onionsdiced
2large carrotssliced
2 cupsbaby potatoeshalved, cubed if using sweet potato
2cupsgreen beanssliced
1tablespoonminced garlic
4cupsbeef broth/stock
2cans tomato15 ounces each
2tablespoondijon mustard
2teaspoonsalt
2teaspoondried oregano
2teaspoondried thyme
2teaspoonchili powder
1teaspoonparsley
Instructions
Set the Instant Pot to the Sauté setting and sauté the ground beef and onion until the ground beef in browned.
Add all the rest of the ingredients to the pot and stir.
Seal the instant pot and use the manual setting - High Pressure and 15 Minutes on the timer.
Use quick or natural release.
Serve and enjoy!
Notes
Omit the potato, or substitute it with cauliflower (or any other vegetable of your own choice) to make this soup recipe low carb and keto approved.
