This Smoked Sausage Hash is great with some fried eggs and a big glass of orange juice. It's the perfect start to a lazy weekend morning.

Ingredients
8ouncessmoked sausage,sliced
2tablespoonsolive oil
3medium russet potatoes,diced
1/2cuponion,diced
1/2cupred pepper,diced
1/2cupgreen pepper, diced
1clovegarlicminced
1/2tspcumin
1/4tspcayenne pepper
salt & pepper to taste
Instructions
In a large skillet, heat 1 tablespoon of olive oil over medium high heat. Add sliced sausage and cook until it starts to crisp then flip, about 4-5 minutes. Remove from pan and set aside.
Add the rest of the olive oil then the potatoes. Cook until the potatoes start to soften, about 5 minutes.
Add in the onion, red pepper, green pepper, garlic and seasonings. Cook until onion is translucent, about 2-3 minutes.
Once the vegetables are softened and the potatoes start to crisp, add the sausage back in. Cook until rewarmed then serve hot.
Notes
I use this vegetable chopper to diced all the veggies into perfectly even squares in no time. Feel free to add your own favorite vegetables or leave out any that you're not particularly fond of.
