Cilantro Apple Slaw

Ingredients

  • 1 • granny smith apple
  • 2 cups • shredded cabbage [I used one cup each of red and regular cabbage]
  • 1 • carrot [grated]
  • 1/4 • chopped fresh cilantro
  • 3 tbsp • oil
  • 1 tbsp • red wine vinegar
  • 1 tbsp • lime juice
  • 1 • garlic clove [minced]
  • to taste • salt and pepper

Instructions

  • Cut the apple into thin strips and mix with the cabbage, carrot and cilantro.
  • In a jar, shake together the oil, red wine vinegar, lime juice, garlic, salt and pepper.
  • Pour the dressing over the salad and toss.
  • Refrigerate until ready to use.
