These Baked Beef Taquitos are a crispy, oven-baked version of the classic favorite, filled with seasoned ground beef, onions, and melted cheddar cheese.
Preheat your oven to 425°F. In a large skillet over medium heat, cook the ground beef until browned. Add the diced onion and cook until softened, about 3-4 minutes.
Stir in the taco seasoning and water. Let it simmer for 2-3 minutes until the mixture thickens slightly. Remove from heat and let cool slightly. Stir in the shredded cheddar cheese.
Heat the corn tortillas in the microwave or on a skillet to make them pliable. Wrap them in a damp paper towel and microwave for 20-30 seconds, or warm in a dry skillet for about 10 seconds on each side.
