Preheat the oven to 450 degrees and line a baking sheet with parchment paper.
In a large bowl, whisk together the einkorn flour, baking powder, and garlic salt.
Pour in the buttermilk and melted butter and stir gently until the dough just comes together. Fold in the shredded cheddar cheese.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the biscuits are puffed and lightly golden on top.
While the biscuits bake, melt additional butter and stir in a small amount of garlic powder.
Brush the warm biscuits with the garlic butter as soon as they come out of the oven, then serve warm.
