Preheat the oven to 350°F. Line an 8×8 pan with parchment paper or grease it well.
In a bowl, whisk together the oat flour, baking soda, and salt.
In a separate bowl, whisk the eggs, maple syrup, melted coconut oil, and vanilla until smooth.
Pour the wet ingredients into the dry ingredients and stir until combined.
Fold in the old fashioned oats and chocolate chips. Spread the batter evenly in the pan.
Bake for 18 to 24 minutes, or until the center is set and the edges look lightly golden.
Let cool completely, then slice into bars.

Notes
Do not over mix:
Stir just until combined so the bars stay soft and chewy.
Press batter evenly:
Smoothing the top helps the bars bake evenly and slice cleanly.
Watch the bake time:
Pull them when the center is set since overbaking can make oat bars dry.
Cool before slicing:
Let the bars cool completely so they firm up and do not crumble.
Add chips on top:
Sprinkle a few extra chocolate chips on top before baking for a prettier finish.
