In a medium bowl or large jar, stir together the cottage cheese, milk, honey, and vanilla extract until well combined.
Add the oats and chia seeds and stir until everything is evenly mixed.
Cover and refrigerate overnight, or for at least 4 hours.
Stir before serving, then add your favorite toppings if desired.

Notes
Stir well before chilling:
Make sure the cottage cheese, milk, honey, oats, and chia seeds are fully mixed so the oats set evenly.
Let it chill long enough:
Overnight gives the oats the best texture, but at least 4 hours is enough if you need them sooner.
Blend for a smoother texture:
If you do not want the cottage cheese curds as noticeable, blend the cottage cheese first before mixing.
Adjust the thickness:
If the oats are too thick after chilling, stir in a splash of milk before serving.
Add toppings right before eating:
This keeps fruit, granola, and other toppings fresh and gives the oats the best texture.
