Place the chicken breasts in the crockpot in a single layer.
Add the barbecue sauce, apple cider vinegar, honey, garlic powder, onion powder, and paprika directly to the crockpot. Stir gently to coat the chicken.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and easily shreds.
Remove the chicken from the crockpot and shred it using two forks.
Return the shredded chicken to the crockpot and stir to coat evenly in the sauce.
Serve the BBQ chicken on burger buns topped with coleslaw, in lettuce wraps or over cauliflower rice.
