Preheat the oven to 375°F and lightly grease a baking dish.
Cut the pears in half lengthwise and scoop out the cores, then place them cut side up in the baking dish.
In a small bowl, whisk together the honey, melted coconut oil, vanilla extract, and cinnamon.
Spoon the honey mixture over the pears, then sprinkle the chopped walnuts on top.
Bake for 25 to 30 minutes, or until the pears are tender and lightly caramelized.
Serve warm, spooning any extra sauce from the baking dish over the top.

Notes
Use ripe but firm pears:
The pears should be ripe enough to be sweet, but still firm enough to hold their shape while baking.
Choose a good baking pear:
Bosc and Anjou pears work especially well because they soften nicely without falling apart too quickly.
Do not skip the sauce:
Spoon the honey mixture over the pears before baking and again before serving so they stay flavorful and glossy.
Check for tenderness:
The pears are done when a fork slides in easily, but they should still hold their shape.
Add the walnuts near the end if needed:
If your walnuts start browning too quickly, you can sprinkle them on during the last 10 minutes of baking.
