Line a muffin pan with paper liners or use a silicone muffin pan.
In a large bowl, stir together the peanut butter and honey until smooth and well combined. Add the oats and mix until everything is evenly coated.
Divide the mixture between the muffin cups and press it down firmly into an even layer.
Add the chopped dark chocolate and coconut oil to a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until smooth.
Spoon the melted chocolate over the tops of the oat cups and spread it out evenly.
Refrigerate for about 1 hour, or until the chocolate is set and the cups are firm.

Press the base firmly:
Use the back of a spoon or your fingers to pack the oat mixture down well so the cups hold together once chilled.
Use muffin liners for easy removal:
Paper or parchment liners make it much easier to lift the peanut butter oat cups out cleanly.
Melt the chocolate gently:
Microwave in short intervals and stir often so the chocolate stays smooth and does not scorch.
Chill until fully set:
Let the cups chill long enough for the chocolate topping to firm up and the oat base to hold its shape.
Store them cold:
These keep their texture best in the refrigerator or freezer, especially if your peanut butter is on the softer side.
