This Gluten-Free Berry Cobbler recipe is a sweet combination of fresh berries and crumbly topping. Serve this easy berry cobbler with a scoop of vanilla ice cream.
Preheat the oven to 350°F. Lightly grease an 8x8-inch baking dish or similar-sized oven-safe dish.
In a medium bowl, combine the mixed berries, honey, cornstarch, and 1 teaspoon vanilla extract. Stir to coat evenly, then pour the mixture into the prepared baking dish.
In a separate bowl, whisk together the almond flour, coconut flour, coconut palm sugar, baking powder, and salt. In another small bowl, whisk the egg, melted butter, and remaining 1 teaspoon vanilla extract.
