Preheat your oven to 425°F. Line a baking sheet with parchment paper.
In a large bowl, toss the sliced potatoes with olive oil, salt, and paprika until evenly coated.
Spread the potatoes in a single layer on the prepared baking sheet. Bake for 30-40 minutes, flipping halfway, until golden brown and crispy.
Remove the fries from the oven and sprinkle the shredded cheddar cheese evenly over the top.
Add the crumbled bacon on top of the cheese. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Sprinkle with sliced green onions after baking. Serve with ranch dressing for dipping or drizzle it on top.
