Bring the gallon of water to a boil in a large pot.
Remove from heat and add the rooibos teabags. Steep for 10–15 minutes, depending on how strong you prefer the tea.
Remove the teabags and stir in the honey until fully dissolved.
Add the sliced peaches to the warm tea and let them steep as it cools to room temperature.
Transfer to a pitcher and refrigerate for at least 2 hours, or until fully chilled.
Serve over ice with extra peach slices if desired.

Notes
Steep longer for stronger flavor:
If you like bold iced tea, let the rooibos steep the full 15 minutes.
Sweeten while warm:
Add the honey while the tea is still hot so it dissolves smoothly.
Enhance peach flavor:
Gently press some of the peach slices with a spoon before chilling to release extra juice.
Chill fully:
Refrigerate until very cold, iced tea tastes best when served extra chilled.
Make it sparkling:
Swap some of the water with sparkling water just before serving for a fizzy twist.
Garnish:
Add fresh mint, lemon slices, or extra peach slices for a pretty and refreshing finish.
