This Fiesta Lime Chicken is a quick, skillet-made dinner that combines chicken with fresh lime juice, garlic, and warm spices, finished with a creamy ranch topping and melted cheese.
In a medium bowl, whisk together the lime juice, minced garlic, paprika, salt, cumin, and pepper. Add the chicken breasts and turn to coat evenly. Cover and marinate for at least 30 minutes.
Heat a large skillet over medium heat with a light drizzle of oil. Add the marinated chicken and cook for 6–7 minutes per side, until golden brown and cooked through.
While the chicken cooks, stir together the ranch dressing and taco seasoning in a small bowl until smooth.
Reduce the heat to low. Spoon the ranch mixture evenly over each chicken breast and sprinkle with shredded Colby Jack cheese.
