Preheat the grill to medium-high heat. Lightly oil the grates or a grill pan to prevent sticking.
Wash and halve the peaches. Remove the pits, but leave the skins on.
In a small bowl, mix the honey, olive oil, cinnamon, and vanilla extract. Brush the cut side of each peach half with the mixture.
Place the peaches cut side down on the grill. Cook for 3–4 minutes, or until grill marks form and the peaches are softened.
Remove from the grill and serve immediately as-is or with toppings like yogurt, whipped cream, or ice cream.
