Add the rolled oats, chia seeds, honey, and diced strawberries to a jar or airtight container.
Pour the almond milk over the top, making sure the liquid reaches and covers the oats. Gently stir to combine so everything is evenly distributed.
Cover the container and refrigerate for at least 5 hours, or overnight, until the oats are soft and the mixture has thickened.
Stir well before serving. Add extra strawberries or a drizzle of honey on top if desired.

Notes
Stir before chilling:
Mixing everything well before refrigerating helps the chia seeds thicken evenly and prevents clumps.
Use fresh, ripe strawberries:
Ripe strawberries add the best natural sweetness and flavor to the oats.
Adjust thickness to taste:
If the oats are too thick in the morning, stir in a splash of almond milk before serving.
Sweeten as needed:
Taste before serving and add extra honey if your strawberries aren’t very sweet.
