For this recipe, I prefer cooking the eggs, because nowadays it feels like even when you buy free-range organic eggs from the supermarket, you can never be fully sure where they came from or even exactly how old they are. So, it’s just a little safety precaution. Using raw honey to sweeten the eggnog, you also only consume about half a tablespoon per serving. Which is not only way less than the daily low-carb diet honey allowance, but also very good for you if you use local raw honey.
The whole thing needs about 10-15 minutes of hands-on time, a good nights rest in the fridge and you’re ready to go!
Ingredients to Make Homemade Eggnog:
- milk
- heavy cream
- egg yolks
- raw honey
- vanilla extract
- cinnamon
- nutmeg
- rum (optional)
How to Make Homemade Eggnog:
- Heat up the milk, heavy cream, vanilla, cinnamon and nutmeg in a large saucepan.
- While the milk mixture heats up, whisk the egg yolks and honey together until light and fluffly.
- When the milk mixture starts to steam, not boil, slowly add a ladle of it to the egg mix while whisking continuously.
- Now that the eggs are tempered, add it back to the saucepan with the rest of the milk mixture and bring it back to almost boiling. It will start to thicken a little bit.
- Pour the eggnog into a mixing bowl and leave to cool in the fridge overnight.
