zucchini loses a lot of moisture. Is there a way to avoid that? Like steaming and leaving it in a sieve and put it in a sauce just before serving to warm?

Hi Miranda, in my experience people usually try to get rid of some of the moisture. So, I've never given much thought to the contrary - I think your idea of steaming the zucchini might work, or at least be worth a shot to try out!
