Cauliflower Soup
Cauliflower Soup – a light, but filling cauliflower soup with peas and crispy bacon goodness that comes together in just 25 minutes.

Ingredients to Make Cauliflower Soup:
- large head of cauliflower
- vegetable broth
- bacon strips
- frozen peas
- garlic cloves
- 1dried thyme
- heavy cream
- salt and pepper
How to Make Cauliflower Soup:
- Boil the cauliflower florets in the vegetable broth, garlic and thyme for approximately 10-15 minutes. Until they are tender.
- Use and immersion blender to blend the cauliflower and broth together until smooth.
- Add the chopped bacon, peas and cream to the soup.
- Season to taste with salt and pepper.

- 1 large head of cauliflower, chopped
- 4 cups vegetable broth
- 6 bacon strips, cooked and chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1/2 tsp dried thyme
- 1/2 cup heavy cream
- salt and pepper to taste
Instructions
- Boil the cauliflower florets in the vegetable broth, garlic and thyme for approximately 10-15 minutes. Until they are tender.
- Use and immersion blender to blend the cauliflower and broth together until smooth.
- Add the chopped bacon, peas and cream to the soup.
- Season to taste with salt and pepper.
Notes
- Add the peas earlier and blend with the cauliflower if you’d prefer a more strongly pea flavored soup.
