    One of the biggest challenges of eating healthy is knowing what to munch on when you’re feeling snackish. In an ideal world, you’d be able to ignore those snackish feelings until your next meal. But unfortunately this is not an ideal world and snackish feelings happen to the best of us on occasion.

    So, the best thing you can do is to always be prepared and ensure that you have healthy snacks around the house.

    Lately, one of my favorite healthy snacks is Butternut Squash Chips. Vegetable chips in general are awesome, but pretty time consuming when you bake them in the oven or use a dehydrator. BUT, if you’re not against utilizing your microwave, then this recipe is right up your alley.  Not only does it take just a few minutes to make, but they turn out crunchy just like chips should be. Quick and easy vegetable chips for the win!

    The only drawback of this snack is that it’s not exactly fun to cut up a whole butternut, but if you’re willing to spend just a little extra at the grocery store, you can buy a prepped butternut and then you just need to slice it into thin chips with your mandolin.

    So, how do you make vegetable chips without an oven or dehydrator?

    Toss your thinly sliced butternut squash in a tiny bit of oil and seasoning. Then all you need to do is arrange them in a single layer on a microwavable plate and microwave them at high for approximately 4 minutes. It’s going to vary a bit depending on your own microwave, but once you’ve made this a few times you’ll kind of learn to know when your chips are ready by the look and smell of it.

    I’ve only ever tried this method with butternut chips so far, but I’m pretty sure it’ll work with a variety of vegetables and will experiment more in the future.

    Ingredients

    • 1 butternut squash (peeled and sliced thinly with a mandolin)
    • 2 tablespoon avocado oil (or any oil of preference)
    • to taste salt/seasoning of choice

    Instructions

    • Toss the sliced butternut, oil and seasoning together in a bowl.
    • Arrange the slices in a single on a microwaveable plate.
    • Microwave for approximately 4 minutes per batch.

    Tips and Tricks:

    1. The chips are ready when they start to darken in color. They’ll crisp up once they are cooled down. If they’re chewy, not crispy, they need to cook longer so adjust the time for the next batch.
    2. One whole butternut takes 3-4 batches, depending on the size of the plate you use to cook them in the microwave.
