Yuck to Yum 10 Delicious Recipes with Spinach

So, I guess spinach isn’t really the yuckiest vegetable out there (unlike brussels sprouts and broccoli), but it’s still a vegetable, and therefore hated by a lot of kids and even adults. Spinach is a lot easier to sneak into food, or to transform into something delicious though.

If you’re trying to add some more super healthy spinach to your diet, in a non-disgusting way, I suggest you take a look at our 10 Delicious Recipes with Spinach…

    1. Quick Italian Eggs with Spinach

Spinach for breakfast? I’ll never say no to that. Spinach has become a breakfast staple for me in the last few years and I’ve never looked back. What I like about this recipe is that the spinach isn’t overpowering. You won’t be chewing on a mouthful of leaves. It blends well with the other flavors to form a delicious spinach breakfast.

    2. Spinach Basil Pesto

If you want to add spinach to your family’s diet, and be sly about it at the same time, this is the way. Combined with some regular basil, this creates a delicious and so much healthier food favorite – pesto!

    3. Prosciutto-Wrapped Cod with Lemon Caper Spinach

Fish is one of my favorite things to eat with spinach. This prosciutto-wrapped cod on a bed of lemon caper spinach hits all the right notes.

    4. Warm Spinach Salad with Figs and Butternut

Hmmm, even though spinach has a really meaty and slightly bitter flavor, it works incredibly well with sweeter ingredients like figs and butternut. If this warm spinach salad can’t convert you, I don’t know what will!

    5. Cauliflower Creamed Spinach

I absolutely adore creamed spinach. However, I’ve been trying to avoid dairy for a while, so this is the perfect alternative if you’re going dairy-free like me.

    6. Strawberry Cucumber Spinach Salad with Apple Cider Vinaigrette

Remember what I said about spinach working well with sweet ingredients? This is another perfect example. Spinach makes the perfect base for a sweeter, fruitier salad.

    7. Spinach Stuffed Portobello Mushrooms

Stuffed portobello mushrooms has been a Chirpy-family favorite for as long as I can remember. Who wouldn’t want a delicious smoky portobello mushroom stuffed with caramelized onions and sautéed spinach??

    8. Creamy Baked Spinach and Artichoke Dip

One of the best food discoveries I’ve had in the USA is spinach and artichoke dip. Now I can’t imagine my life without it. This recipe is a great way for me to have my dip fix without all the weird ingredients and additives you find in restaurant and store dips.

    9. Spinach Quiche with Bacon and Mushrooms

Is it tea time yet? What better way to enjoy a cup of afternoon tea with a delicious spinach quiche (maybe with a side of some no bake almond cookies too)? You know you want to do it!

    10. Spinach and Potato Curry

I’ve been devouring a lot of curry lately. Why not throw some spinach in?
