Ingredients to Make Avocado Chicken Salad:

  • shredded chicken
  • mayonnaise
  • avocados
  • lime
  • purple grapes
  • fresh cilantro

How to Make Avocado Chicken Salad:

  1. In a medium mixing bowl, mash avocados and squeeze in the juice from the lime. Be sure to cover all the avocado evenly with lime juice so it does not brown.
  2. Add in shredded chicken, mayonnaise, purple grapes and cilantro. Mix until everything is fully incorporated.

Notes & Tips:

  • Store in the fridge for up to five days or freeze for up to three months.
  • Optional add ins: bacon bits, corn kernels, hot sauce, red onion.
  • Serve on rye bread, sourdough bread or croissants or lettuce leaves for a gluten free option
  • Use leftover rotisserie chicken, shred your own cooked chicken breast or use canned chicken.

  • 2 ripe avocados
  • 1 lime
  • ½ cup purple grapes halved
  • 2 tablespoons fresh cilantro chopped
